Different by their measure
Ask the regulars of a small Riyadh restaurant why they come here rather than to the place two doors down, and none of the answers are in the concept deck.
The parking is shaded, which in the first properly hot weeks of the year stops being a detail. The family section is actually private, not a curtain and an apology. The kitchen is open at one in the morning, so people finishing a late shift know they will not be turned away at the door. The bathroom is clean. The man on the till knows the order before it is said.
Ask the operator the same question and you get the menu. The fusion, the imported flour, the chef who trained somewhere with a name. Real work, real money, and the customer standing in a car park that is already too hot at four in the afternoon is choosing on the shade.
I do not think the operator is wrong about the food. I think different is not a property of the thing that was built. It is whatever the customer says out loud when somebody asks why here, and most operators have never asked, because the answer is not flattering enough to want.
The ones who do ask end up somewhere better. Shade can be extended. A section can be made properly private. A kitchen can be kept open, staffed for it, and said plainly in the copy. Every one of those is easier to defend to a partner than a menu nobody orders from.
Better is decided in the kitchen. Different is decided in the car park, by somebody who will never fill in a survey.
