Jeddah opens in Riyadh

A restaurant that works in Jeddah opens in Riyadh with the same menu, the same hours and the same easy seaside manner, and then spends a year wondering why the room feels wrong.

Nothing on the menu is bad. The trouble is that the menu is a Jeddah document.

Jeddah eats loosely. People arrive when they arrive, the table grows through the evening, a cousin joins at the end and a chair is found. So the room is built for four to six who might become nine. Riyadh eats later and in declared groups, and the table is booked as a table. A place that has no room for twelve, no family section that genuinely works as one, and nowhere a host can put his guests where the rest of the restaurant cannot hear them, loses the booking on the phone before anybody tastes the food.

Then there is the manner. Seaside ease is Jeddah's entire personality and it does not travel inland. In a capital, relaxed reads as unfinished: no host at the door, staff who are warm instead of correct, a fit-out that says beach in a city with no beach. What is charm at home is graded as a missing standard in a market that judges hospitality on the arrival rather than the exit.

None of this appears in the plan, because the plan is a rollout, and a rollout assumes the thing being repeated is the restaurant.

What actually crosses the country is the name. The name fills the first tables, and it is worth having. Everything after those tables is a new restaurant, in a room its customer has never entered, being told about a city nearly nine hundred kilometres away as though that were a recommendation.
