The compound talks

On the coast a restaurant does not get a season. It gets a small town.

A few thousand households, the same ones every weekend, in compounds where everybody knows whose family is in which villa and where the parents went to school. The population does not refresh mid-season. The audience that will decide the summer has already arrived, and it talks constantly, in group chats that carry the whole road.

Opening night is always full. Curiosity is free, and the same twenty families are on every list. Nothing is learned from a full opening night.

The verdict lands on the second weekend. That is when the people who came the first time say whether it was the same: whether the kitchen held on a busy Friday, whether the waiter who remembered the order is still there, whether the fish was the same size, whether the bill was the same bill.

In a market with no new arrivals, consistency is not a virtue. It is the whole product. There is no fresh audience next week to forgive a bad Friday, and no campaign fast enough to outrun a road where everybody compares notes.

Most of the money goes on the opening. The lights, the creators on the terrace, the first-night menu the kitchen will never cook again at that speed.

Nobody counts the second weekend. The second weekend is the one that decides.
