The set menu on a full night

Every year on this date the same page appears on the table.

One sheet, laminated or printed that week. Four courses, a fixed price per couple, a flower and a glass of something included. The ordinary menu has gone back to the stand by the door.

This year it lands on a Saturday, which is the part worth noticing. In Cairo and Dubai the day itself is loud and commercial. In Riyadh it is quiet, and the room is full anyway, because a February Saturday with the season running is the best trading night of the week in one of the best trading months of the year. Those rooms were going to fill at nine tonight with or without the page.

So the set menu is not an offer. It is a price rise on a night that did not need selling, and the tell is whether a customer can still ask for the ordinary menu. If they can, it is a format. If they cannot, it is a toll.

Tomorrow the number reads beautifully. Spend per cover up by a third, the room turned twice, the strongest Saturday of the quarter. It reads as a marketing result. It is a calendar result, and a laminated page has taken the credit for a February weekend.

What the price actually bought is on nobody's report. The couple at that table are not comparing it with anything tonight. They are storing one figure, which is what this place costs, and they will use it in April when they are deciding where to go on an ordinary Thursday.

A restaurant can charge the peak price or it can own the remembered one. Very few rooms are strong enough for both, and the ones that are do not need the page.
