The terrace month

Field note. December is the month the Gulf lives outdoors.

For about ten weeks, from the end of November into February, every table that can be carried outside is outside. The terrace that was a store room in August is the best room in the house. The queue is for the tables under the sky, not the ones under the air conditioning, and the heaters come out on the coldest nights, which are not cold.

Watch what it does to one restaurant. A place with sixty covers inside has a hundred and twenty for the season. Same kitchen, same rent, same menu. The room doubled, without a riyal of media.

Now look for the terrace in the marketing plan. It is not there.

The plan has a line for the festive offer, a line for the creators who will come and photograph the food, a line for the campaign. Nobody wrote a line for the terrace, because nobody thinks of a floor as something marketing owns. So the most valuable asset in Gulf hospitality, the one that fills itself, sits outside the plan, while the plan spends its budget filling the room the restaurant already had.

The operator who reads the forecast puts the terrace in the plan. The outside tables go on the booking page as their own thing, the photography moves outdoors, the extra floor staff are hired in November, and the message to the family WhatsApp group is about where you will be sitting, not what you will be eating.

The operator who reads the calendar runs the June campaign again in December, and in January reads the full terrace as proof that it worked.
