August is the floor
A restaurant in Riyadh or Dubai will see its truest number this month, and almost nobody writes it down.
August covers. No visitors, the schools still shut, no season, no promotion, half the regulars abroad. What walks through the door in the first fortnight of August is the people who live within ten minutes of the place and did not leave. That is the floor. Everything the restaurant does in December sits on top of it.
The plan never mentions it. Every plan I have seen for a Gulf restaurant is built from the peak: December's covers, the season's Thursday nights, the opening week. The peak is the number the founder says out loud, the number the investor was shown, the number the rota is designed around. August is treated as an interruption to be survived, and by the time the city is back nobody remembers what it was.
But the peak is weather: visitors, a season, an event nearby, a promotion the delivery app funded, none of which the restaurant controls. The floor is what the neighbourhood thinks of the place when nothing is pushing them through the door, and it is the only number that says whether the restaurant would still exist if the weather stopped.
Small operators can usually tell you their best night to the cover and cannot tell you their August.
Two restaurants can share a December and have different Augusts, and the one with the higher floor is the better business, whatever the peak says. Its marketing is cheaper, because the neighbourhood is already doing it. It has a number to grow from rather than a number to defend.
Everyone plans from the peak, and the floor goes unrecorded. The floor is the business. The season is only weather on top of it.
